Chilli with a hint of chocolate 

On a cold evening nothing warms me through like a steaming bowl of chilli. It can be made really quickly, freezes well, tastes even better on the second warm up and fills the house with wonderful aromas.  I always add chocolate to my chilli dishes….the Aztecs were on to something 🙂

Ingredients:

1 tbsp olive oil                 1 large onion – chopped             500 g lean mince

400 g can chopped tomatoes    410 g can red kidney beans – washed and drained

1 heaped tsp hot chilli powder     1 tsp paprika    1 tsp ground cumin

5 squares of dark chocolate

Method:

Heat the oil in a large oven proof pan. Add the onions and cook until soft.  Add the mince and stir untill browned. Add the tomatoes, kidney beans and spices and stir thoroughly. If the mixture seems dry add half a tin of water. Before putting the chilli into the oven to finish cooking add the chocolate  and stir until melted.

Serve with rice and a bowl of melted cheese laden tortilla crisps.

Leek and potato soup 

I love autumn and winter – perfect weather for a bowl of warming and filling soup. I tend to make my soups hearty rather than a consomme type.

This soup is so easy to make and quick – from thought to tableware in half an hour😊

For a pan load that will provide 4 generous servings I use:

Ingredients:

3 leeks washed and chopped

5 white potatoes  peeled and chopped into small pieces

1 pint of stock – vegetable  or chicken

Cup of milk – optional

Salt and pepper.

Method:

Put the leeks, potatoes stock and seasoning in a pan. Cover and bring to the boil. Simmer until soft. Remove from the heat and blend until nearly smooth. I like to leave the odd chunk. Put back on the heat and add the milk if desired. bring up to boiling and serve.

Steamed broccoli, cavolo nero kale and cod bake

A delicious dish that is assembled and then baked to heat through and crisp up the topping. Takes about 35 minutes from starting to eating 🙂

Ingredients: Broccoli, cavolo nero kale, large cod fillet, cheese sauce, plain tortilla chips, grated cheese and black pepper.

Method:

Steam the broccoli and kale. Gently simmer the cod in milk. Make a cheese sauce.

Once all cooked or made then assemble:

1.Put steamed broccoli and kale across the bottom of an oven proof dish

2.Break the cod fillet in to large pieces and arrange

3.Cover with the cheese sauce

4. Sprinkle crushed tortilla over the top and cover with grated cheese and black pepper

5. Bake in the oven until heated through and the topping is crisp

I served this with gf tortilla wraps smothered in garlic butter and baked till starting to crisp.

 

Spiced lentil / quinoa balls in a roasted butternut squash sauce

Preheat oven to 180 C / Gas mark 5.    Line a baking tray with greaseproof paper

Ingredients:

For the ‘meatballs’                                              For the sauce

1 cup quinoa                                                           Medium butternut squash

1 cup green / puy lentils                                     About 400 ml vegetable stock

1 tsp ginger                                                             4 spring onions (coarsely chopped)

1 tsp turmeric                                                         10 cherry tomatoes (chopped in half

2 tsp coconut oil                                                    About 100 ml coconut milk

1 egg                                                                          Spinach (large handful)

(Chick pea flour)                                                    Coconut oil

1 tsp cumin seeds                                                  1 tsp cayenne pepper

Method:

Deseed and chop the butternut squash in to medium-sized chunks. Drizzle with coconut oil and pop in the oven for 30 mins to soften

Rinse the quinoa and lentils and put them in a pan with 3 cups of water and the cumin seeds. Bring to boil and cook until soft. Drain any excess water.

Allow to cool. Add all the other ingredients (except chick pea flour) and mix thoroughly. If the mixture is loose add a desertspoon of chick pea flour and mix again. You may have to do this a couple of times. Take a generous desertspoon full of mixture and roll in to a ping-pong sized ball. Lay the balls on the prepared tray

and cook in the oven for 10-15 mins.

When the butternut squash is roasted, put half in to a blender along with the vegetable stock – you want a thick sauce consistency so add the liquid a little a time until this is achieved.

Fry the spring onions until soft. Add the cayenne powder and stir for a minute. Add the tomatoes and cook for another minute. Add the butternut squash sauce

and once heated through add the spinach and allow to wilt.Stir in the coconut milk.

Place the ‘meatballs’ in to the sauce and simmer gently.20160916_180635Prior to serving pop the remaining butternut squash chunks in to the sauce.

I served this with naan bread. Enjoy.

If the egg was replaced with tofu, this would be a vegan dish.

Mushroom ‘stroganoff’

A thoroughly delicious but incredibly simple meal. I used full fat everything…but all the relevant ingredients could be substituted for reduced calorie if so desired.

I didn’t really measure anything so this is rough guide:

Ingredients:

Punnet of button mushrooms                          Parmesan      Butter/oil to cook

Brie – chopped into chunks                               Single cream

Garlic clove – finely chopped                            Onion – finely chopped

Method:

Saute the onions, garlic and mushrooms in butter/oil.

Add the brie and stir until melted.

Stir in sufficient cream to make a sauce – do not boil.

Serve immediately. Sprinkle with parmesan.

Delicious on naan (gf) bread.

 

Is 3 the magic number?

The other day I fancied a super speedy breakfast – in truth I couldn’t be bothered to put much effort in! So, 3 minutes later I was chomping on a piece of gluten-free toast slathered (such an onomatopoeic word) in crunchy peanut butter and topped with slices of banana.Delicious.IMG_20160812_100340My caption within my IG post stated, ‘Two’s company but in this case three is definitely not a crowd.’ This got me thinking… I often eat a combination of 3 flavours without thinking about it.

This morning I had a kefir, coconut and maca smoothie. Yesterday’s lunch for my hubby – quail eggs and bacon on gf toast. The day before…avocado, scrambled eggs and oatcakes.  Don’t worry I’m not going to list all my meals over the last month. But, when I look back over my IG account over 50% (always like a statistic) of my meals are a 3 flavour combination.

I started to think about old childhood favourites …fish, chips and mushy peas, beans on toast with grated cheese on top…ooh…choux pastry, cream (i.e. profiteroles) and chocolate sauce.

I have just looked up from typing at my cookbook selection and there on the shelves is Three Good Things by Hugh Fearnley-Whittingstall.

Not sure whether I feel a challenge coming on…would I have to count spices and seasoning as one of my three?

Another winning combination – smoked salmon, lemon juice and bread. Must stop||

It does make me wonder though how much we complicate things – do we need to combine so many flavours in one dish or do we actually savour simple, more?

Pork and apricot casserole

This is a recipe I have made for years but more recently seem to have forgotten how wonderfully well the flavours go together. Having dug around in the freezer during an ‘eat from the freezer’ week (is it only our house or does everyone have a freezer purge / food amnesty once in a while?) I located four pork loin chops. I love making a casserole – very little preparation and the Aga does the rest. An ideal dish for a slow cooker.

Sometimes I put an assortment of ingredients in to a casserole and then serve with simple vegetables. This casserole lends itself to simplicity – 3 flavours: onions, pork and apricots. It is then scrumptious with roast potatoes, honeyed carrots etc.

Serves 4

Ingredients:

1 large white onion  – finely diced

4 pork loin steaks – cut in to large pieces

1 large tin of apricots or 6-8 dried apricots cut in to chunks

Gluten free plain flour        Olive oil – 1 tbsp    Water

Salt and pepper to season

Method:

Heat the oil in a pan and soften the onions. Add the pork steaks and seal both sides. Add a couple of tbsp of flour and mix well. Slowly add water, stirring continuously until a thin gravy is created. Add the apricots and seasoning. Ensure the steaks are covered in liquid. Cover and place in the oven on a low heat for a couple of hours or until the pork is tender.

This dish also works well with prunes instead of apricots.

Beef burgers

Nothing beats out-door cooked food in my mind. We may have erratic and unpredictable weather in this country (UK) but we need very little persuading to fire up a barbecue at the merest hint of a blue sky.

If my family want to eat a burger when we have a barbecue, I don’t have a problem with this as long as I make them from scratch so I know exactly what is in them.

Makes 9 / 10 burgers

Ingredients:

750 g prime beef mince ideally sourced locally

1 large white onion  – chopped finely       2 cloves of garlic – chopped finely

3 slices of green jalapeno pickled pepper – chopped finely

3 slices of red jalapeno pickled pepper – chopped finely

Method:

Put all the ingredients in to a large mixing bowl and combine all the ingredients thoroughly.

Using damp hands form in to burger patties.

Cover and place in the fridge for about 45 minutes. Prior to placing on the barbecue, pan fry to seal both sides.

Serve with a cranberry salsa (recipe on blog)

Courgetti, spring onion and cheese frittata 

Perfect for a light supper on a hot summer’s day 🙂 . The wonderful thing about this dish is that it is delicious both hot and cold.

The number of servings depends upon what is served with the dish – serves 2 if on its own or with a small salad or 4 if served with additional vegetables and new potatoes. Gas mark 5 / 190 c   Oven proof pan

Ingredients:

1 spiralised courgette                      6 eggs – beaten and seasoned with pepper

2 spring onions finely chopped         handful of grated cheese    olive oil for frying

Method:

Gently fry the courgetti and onions for a couple of minutes. Add the grated cheese and beaten egg. Put the pan in the oven for 10 – 15 mins until the frittata is just set.

 

Quail eggs and halloumi salad

So many people still think a salad consists of iceberg lettuce, tomatoes and cucumber.  Glances of pity are thrown in the direction of my husband when he states we had a salad for lunch!!

This delicious salad was simply a combination of soft boiled quail eggs, chopped avocado, chopped plum tomatoes and grilled halloumi sitting on a bed of watercress 🙂
