4 bean and sweetcorn chilli

A really speedy dish using store cupboard ingredients. If large tins are used…serves 4.

Ingredients:

1 tin pinto beans               1  tin cannellini beans

1  tin kidney beans           1  tin butter beans

1 tin sweetcorn                 1 onion chopped

1 carton passata                1 tsp paprika

1 tsp mild/hot chilli powder ( depending on preference)

1 tsp ground cumin         Olive oil for frying

Method:

Fry the onion until soft. Add the spices and stir thoroughly for 1 minute. Rinse and drain all the pulses. Add pulses,  sweetcorn and passata. Cover and leave on a low heat to heat through and allow spices to infuse.

Spinach and grain loaf

Delicious as ‘bread’ or toasted.

Preheat oven to 180 C/ gas mark 5    Prepare a 1 lb loaf tin
Ingredients:

8 eggs                                    1/2 cup coconut oil – melted

1/4 cup chia seeds              1/4 cup linseed

1/4 cup sesame seeds        1/4 cup coconut flour

3 handfuls  spinach           1-2 tsp chilli flakes

Method:

Blend eggs and coconut oil for 1 minute. Add all other ingredients  and blend until thoroughly mixed. Pour in to the loaf tin. Cook for 30-40 minutes – skewer comes out clean. Once cold refrigerate.

Oat, chia and flaxseed breakfast muffin – gluten and dairy free

I have combined ingredients that have a real benefit for the body – some of which I have listed:

Flaxseed – high in fibre aiding digestion and helping to maintain healthy cholesterol and blood sugar levels, omega 3, vitamin B1, manganese, magnesium, phosphorus and selenium

Chia seed – high in fibre, omega 3, potassium, omega 6, calcium, copper, phosphorus and  zinc

Coconut oil – healthy saturated fat

Oatmeal – rich in fibre, high protein, low fat

Spices – ginger and cinnamon – both anti inflammatory

Oat milk – lactose free, low in fat, vitamin E, vitamin B, iron, calcium, zinc and magnesium

The combination also chosen to keep me feeling fuller for longer 🙂  I have used coconut sugar as the sweetener — very little.

Preheat the oven to 180 C / Gas mark 4       Muffin tin – 12 bun

Ingredients:

1 cup of gluten free self raising flour                            2 eggs

1 cup of oatmeal                                                                1/2 cup of oat milk

1 tsp ginger                                                                          1/4 cup coconut oil – melted

1 tsp cinnamon                                                                   1/4 cup coconut sugar

2 tbsp chia seeds                                                                 1 1/2 tsp baking powder

3 tbsp flaxseed

Method:

Put all the dry ingredients into a bowl and mix thoroughly. Add the eggs, milk and coconut oil and stir until mixed. Divide between 12 the muffins.

Place in the centre of the oven and cook for 15-20 minutes – until skewer comes out clean.

Chick pea and lentil stew

This is a really quick dish to make and is delicious on its own or with crusty bread and a salad or baked potato.

Ingredients:

Can of chick peas – drained

Small butternut squash peeled and cubed

Onion – finely chopped                 Olive oil

2 cups of red lentils                        1 tsp ginger

Carton of passata                            1 tsp cinnamon

2 tsp turmeric                                  500 ml vegetable stock

Method:

Fry the onions until soft. Add the spices and heat for another minute. Add all the other ingredients and simmer until the lentils are soft.

 

Chilli roasted vegetables 

We eat roasted vegetables at least once a week. It is such a versatile dish and one that involves minimum effort – perfect 🙂

Invariably we have it as a supporting dish but it is worthy of being a main dish.

This dish posted is simply an assortment of vegetables – carrots, parsnips, peppers and sprouts – roasted in a drizzle of coconut oil for about 40 minutes with the occasionally gentle turning.Then I mixed in a tin of chopped tomatoes and a generous tsp of chilli powder and  topped with grated cheese. Back in to the oven to heat through. Serve with crusty bread.

Spiced lentil / quinoa balls in a roasted butternut squash sauce

Preheat oven to 180 C / Gas mark 5.    Line a baking tray with greaseproof paper

Ingredients:

For the ‘meatballs’                                              For the sauce

1 cup quinoa                                                           Medium butternut squash

1 cup green / puy lentils                                     About 400 ml vegetable stock

1 tsp ginger                                                             4 spring onions (coarsely chopped)

1 tsp turmeric                                                         10 cherry tomatoes (chopped in half

2 tsp coconut oil                                                    About 100 ml coconut milk

1 egg                                                                          Spinach (large handful)

(Chick pea flour)                                                    Coconut oil

1 tsp cumin seeds                                                  1 tsp cayenne pepper

Method:

Deseed and chop the butternut squash in to medium-sized chunks. Drizzle with coconut oil and pop in the oven for 30 mins to soften

Rinse the quinoa and lentils and put them in a pan with 3 cups of water and the cumin seeds. Bring to boil and cook until soft. Drain any excess water.

Allow to cool. Add all the other ingredients (except chick pea flour) and mix thoroughly. If the mixture is loose add a desertspoon of chick pea flour and mix again. You may have to do this a couple of times. Take a generous desertspoon full of mixture and roll in to a ping-pong sized ball. Lay the balls on the prepared tray

and cook in the oven for 10-15 mins.

When the butternut squash is roasted, put half in to a blender along with the vegetable stock – you want a thick sauce consistency so add the liquid a little a time until this is achieved.

Fry the spring onions until soft. Add the cayenne powder and stir for a minute. Add the tomatoes and cook for another minute. Add the butternut squash sauce

and once heated through add the spinach and allow to wilt.Stir in the coconut milk.

Place the ‘meatballs’ in to the sauce and simmer gently.20160916_180635Prior to serving pop the remaining butternut squash chunks in to the sauce.

I served this with naan bread. Enjoy.

If the egg was replaced with tofu, this would be a vegan dish.

Is 3 the magic number?

The other day I fancied a super speedy breakfast – in truth I couldn’t be bothered to put much effort in! So, 3 minutes later I was chomping on a piece of gluten-free toast slathered (such an onomatopoeic word) in crunchy peanut butter and topped with slices of banana.Delicious.IMG_20160812_100340My caption within my IG post stated, ‘Two’s company but in this case three is definitely not a crowd.’ This got me thinking… I often eat a combination of 3 flavours without thinking about it.

This morning I had a kefir, coconut and maca smoothie. Yesterday’s lunch for my hubby – quail eggs and bacon on gf toast. The day before…avocado, scrambled eggs and oatcakes.  Don’t worry I’m not going to list all my meals over the last month. But, when I look back over my IG account over 50% (always like a statistic) of my meals are a 3 flavour combination.

I started to think about old childhood favourites …fish, chips and mushy peas, beans on toast with grated cheese on top…ooh…choux pastry, cream (i.e. profiteroles) and chocolate sauce.

I have just looked up from typing at my cookbook selection and there on the shelves is Three Good Things by Hugh Fearnley-Whittingstall.

Not sure whether I feel a challenge coming on…would I have to count spices and seasoning as one of my three?

Another winning combination – smoked salmon, lemon juice and bread. Must stop||

It does make me wonder though how much we complicate things – do we need to combine so many flavours in one dish or do we actually savour simple, more?

Beef burgers

Nothing beats out-door cooked food in my mind. We may have erratic and unpredictable weather in this country (UK) but we need very little persuading to fire up a barbecue at the merest hint of a blue sky.

If my family want to eat a burger when we have a barbecue, I don’t have a problem with this as long as I make them from scratch so I know exactly what is in them.

Makes 9 / 10 burgers

Ingredients:

750 g prime beef mince ideally sourced locally

1 large white onion  – chopped finely       2 cloves of garlic – chopped finely

3 slices of green jalapeno pickled pepper – chopped finely

3 slices of red jalapeno pickled pepper – chopped finely

Method:

Put all the ingredients in to a large mixing bowl and combine all the ingredients thoroughly.

Using damp hands form in to burger patties.

Cover and place in the fridge for about 45 minutes. Prior to placing on the barbecue, pan fry to seal both sides.

Serve with a cranberry salsa (recipe on blog)

Courgetti, spring onion and cheese frittata 

Perfect for a light supper on a hot summer’s day 🙂 . The wonderful thing about this dish is that it is delicious both hot and cold.

The number of servings depends upon what is served with the dish – serves 2 if on its own or with a small salad or 4 if served with additional vegetables and new potatoes. Gas mark 5 / 190 c   Oven proof pan

Ingredients:

1 spiralised courgette                      6 eggs – beaten and seasoned with pepper

2 spring onions finely chopped         handful of grated cheese    olive oil for frying

Method:

Gently fry the courgetti and onions for a couple of minutes. Add the grated cheese and beaten egg. Put the pan in the oven for 10 – 15 mins until the frittata is just set.

 

Smoked mackerel, Greek yoghurt,  cucumber,  spring onions and dill

This only took a couple of minutes  to prepare…my favourite sort of meal😀

Serves 3 as a main dish with new potatoes. Would serve 4 – 5 as a starter.

Ingredients:

Large handful of spinach and watercress for each person

4 spring onions – chopped

Large piece  (10-15 cm) cucumber chopped in to cubes

Greek yoghurt

3 smoked mackerel fillets – skinned and flaked

Handful of dill – chopped

Pomegranate seeds to garnish.

Method:

Put prepared onions,cucumber and mackerel in a bowl and add 3-4 heaped tbsp of yoghurt. Mix together. Add most of the dill – keep some back to sprinkle over as a garnish.Serve out on to watercress/spinach  and top with dill and pomegranate seeds.  New potatoes complement this dish very well 😀
